Au Crocodile is a restaurant in Strasbourg, France, serving French cuisine, holding a Michelin star in 2023.

History

The restaurant was named after a stuffed crocodile that a local general brought back from overseas whilst on Napoleon Bonaparte's campaign in Egypt and Syria, [1] and which is hung over the foyer. [2] In 1921, the prominent French gastronomic journalist Curnonsky (nicknamed the "Prince of Gastronomy") wrote about Au Crocodile, and the stuffed crocodile in the foyer. [3]

Émile Jung and his wife Monique took over the restaurant in 1971 and, in 1989, it was awarded three Michelin stars. [3] In 2002, it lost one of them. Jung said, "No words can ease the pain that eats at our hearts and that has killed our spirits". [4] Some of Jung's colleagues took out a full-page advertisement to show their support. [4] In 2023 the restaurant held one star.

The restaurant has been used as a site for discussing international relations: in May 2010 the Prime Minister of Albania Sali Berisha and his opposition leader Edi Rama were summoned to a meeting there by two leading members of the European Parliament. [5] [6] Chef Philippe Bohrer purchased the restaurant in 2010 from Jung for more than a million euros. Cedric Moulot became owner in 2015, with Franck Pelux as chef.

Le Crocodile in Vancouver, British Columbia, Canada, was named after Au Crocodile, after chef Michel Jacob visited the French restaurant as a young man. [7]

Reception

Travel guide Fodor's described the dishes of chef Bohrer as "dazzling", and thought that the interior was "aglow". [1] The review in travel guide Frommer's also thought favourably of the interior of the restaurant, and described the dishes as "inventive", saying their "major problem comes only when the bill ... arrives". [8]

In 2018 Au Crocodile topped TripAdvisor's list of the World's best restaurants. [9] In 2023 the restaurant held one Michelin star. [10]

Éric Chavot is a French Michelin starred chef. He was working the head chef at the Bob Bob Cité and Bob Bob Ricard restaurants in London until January 2020, as well as the consultant chef at the Royal Albert Hall's Coda restaurant. Born in Arcachon, Gironde, Chavot was trained at the Boucanier, then at the Patio.

De Echoput is a restaurant and part of Hotel Gastronomique De Echoput in Hoog Soeren, Apeldoorn in the Netherlands. It is a fine dining restaurant that was awarded one or two Michelin stars in the period 1971–1997, 2002-2004 and in 2012. GaultMillau awarded the restaurant 15.0 out of 20 points.

Hibiscus was a London restaurant which was owned and run by French chef Claude Bosi. It was opened in 2000 in Ludlow, Shropshire, and won its first Michelin star within a year, and a second in the 2004 Guide. In July 2006, Bosi and his wife Claire announced that they were to sell the location in Ludlow and move closer to London. The property was sold to Alan Murchison, and Bosi purchased a new site on Maddox Street in London. The restaurant closed in 2016.

Nico Ladenis is a Tanganyikan-born chef of Greek descent, best known for his restaurants in the UK. He won three Michelin stars and his restaurant Chez Nico was rated ten out of ten by the Good Food Guide. Harveys was a restaurant in Wandsworth, London, run by chef Marco Pierre White between 1987 and 1993. Its French cuisine was warmly received by food critics, and it was named Restaurant of the Year by The Times in 1987.

Mosconi is an Italian restaurant located at 13 rue Munster in the Grund district of Luxembourg City, Luxembourg, overlooking the river Alzette. Headed by chef Illario Mosconi, formerly from Lombardy, Italy, it is one of the Relais & Châteaux series of hotels and gourmet restaurants from around the world. The menu is an eight-course set menu of pasta dishes prepared with most of the ingredients imported from Italy. Mosconi became the first Italian restaurant to receive a Michelin star in Benelux. For a time, it had two Michelin stars but reverted to just one again in the guide for 2014.

Note by Note cuisine is a style of cooking based on molecular gastronomy, created by Hervé This. Dishes are made using pure compounds instead of using animal or plant tissues. Hervé This said the cuisine is like "a painter using primary colours, or a musician composing electroacoustic music, wave by wave, using a computer".

Michel Roth is a French chef who has been awarded two stars by the Michelin Guide. He has also received other famous titles, such as the Bocuse d'Or and Meilleur Ouvrier de France, both in 1991.

Elzer is recognised for his work as head chef of Pierre at Mandarin Oriental Hotel Hong Kong, L'Atelier de Joël Robuchon and his own branding restaurant, Seasons, by Olivier E. In 2018, Elzer established L'Envol, a modern French fine dining restaurant at the St. Regis Hong Kong. L'Envol is a 2 Michelin Stars restaurant.
