Traditional speciality guaranteed

A traditional speciality guaranteed is a traditional food product protected under European Union and/or United Kingdom law. This label differs from the geographical indications protected designation of origin (PDO) and protected geographical indication (PGI) in that the TSG label does not certify that the protected food product has a link to a specific geographical area, and thus a product can be produced outside the area or country from which it originates.

Geographical indications and traditional specialities in the European Union Protected names and designations of agricultural products and foodstuffs

Three European Union schemes of geographical indications and traditional specialties, known as protected designation of origin (PDO), protected geographical indication (PGI), and traditional speciality guaranteed (TSG), promote and protect names of agricultural products and foodstuffs, wines and spirits. Products registered under one of the three schemes may be marked with the logo for that scheme to help identify those products. The schemes are based on the legal framework provided by the EU Regulation No 1151/2012 of the European Parliament and of the Council of 21 November 2012 on quality schemes for agricultural products and foodstuffs. This regulation applies within the EU as well as in Northern Ireland. Protection of the registered products is gradually expanded internationally via bilateral agreements between the EU and non-EU countries. It ensures that only products genuinely originating in that region are allowed to be identified as such in commerce. The legislation first came into force in 1992. The purpose of the law is to protect the reputation of the regional foods, promote rural and agricultural activity, help producers obtain a premium price for their authentic products, and eliminate the unfair competition and misleading of consumers by non-genuine products, which may be of inferior quality or of different flavour. Critics argue that many of the names, sought for protection by the EU, have become commonplace in trade and should not be protected.

Denominazione di origine controllata Quality assurance label for Italian wine products

The following four classifications of wine constitute the Italian system of labelling and legally protecting Italian wine:

Appellation dorigine contrôlée French protected geographic appellation

In France, the appellation d'origine contrôlée (AOC) is a label that identifies an agricultural product whose stages of production and processing are carried out in a defined geographical area – the terroir – and using recognized and traditional know-how. The specificity of an AOC product is determined by the combination of a physical and biological environment with established production techniques transmitted within a human community. Together, these give the product its distinctive qualities.

Tyrolean grey cheese Austrian rennet-free cheese

Tyrolean grey cheese is a strongly flavoured, rennet-free cows-milk acid-curd cheese made in the Tyrolean Alp valleys, Austria. It owes its name to the grey mold that usually grows on its rind. It is extremely low in fat and it has a powerful penetrating smell. The cheese produced in Austria is registered as protected designation of origin (PDO), Austria generally indicated in German as g.U. under the official name Tiroler Graukäse The registration of the PDO states that its production has been a significant element of Tyrolean peasant gastronomy for centuries. Graukäse produced in Italy is protected by a prodotto agroalimentare tradizionale (PAT) designation. Graukäse making became widespread on farms due to the simplicity of making and the availability of low-fat milk after the fat had been taken for use in butter making.

Indicazione geografica tipica is the third of four classifications of wine recognized by the government of Italy. Created to recognize the unusually high quality of the class of wines known as Super Tuscans, IGT wines are labeled with the locality of their creation. However, they do not meet the requirements of the stricter DOC or DOCG designations, which are generally intended to protect traditional wine formulations such as Chianti or Barolo. It is considered broadly equivalent to the former French vin de pays classification under EU law. Wines from the Aosta Valley, where the French language is co-official, may state Vin de pays on the label in place of Indicazione geografica tipica. This classification is seen to be a higher quality wine than vino da tavola.

Prodotto agroalimentare tradizionale (PAT) is an official approval for traditional Italian regional food products similar to the protected geographical status of the European Union. A list of approved products is published by the Ministry of Agricultural, Food and Forestry Policies. It lists only products that do not qualify for pan-European approval, and as such PAT is only applicable within Italy.

The Italian Landrace is an Italian breed of domestic pig. It derives from the Danish Landrace breed developed in Denmark at the end of the nineteenth century. Stock was imported into Italy after the Second World War. The breed has been selected principally for suitability for the production of prosciutto crudo. It is, after the Large White Italiana, the second-most numerous pig breed in Italy. The breed standard is issued by the Ministero delle Politiche Agricole Alimentari e Forestali, the Italian ministry of agriculture and forestry; the herdbook is kept by the Associazione Nazionale Allevatori Suini, the national pig-breeders' association.

Strada dell'olio is a kind of gastronomical route in Italy that crosses a territory rich of traditional products, PDOs and PGIs, DOCs and DOCGs in Italy. It is sometimes linked to an enological tour.

The Romagnolo or Asino Romagnolo is a breed of donkey from Emilia-Romagna in northern Italy. It is raised mainly in the province of Forlì-Cesena, but also the provinces of Metropolitan City of Bologna, and the provinces of Ravenna and Reggio Emilia. It is one of the eight autochthonous donkey breeds of limited distribution recognised by the Ministero delle Politiche Agricole Alimentari e Forestali, the Italian ministry of agriculture and forestry. The conservation status of the Romagnolo was listed as "critical" by the FAO in 2007.

The Duroc Italiana is the Italian strain of the American Duroc breed of domestic pig. It is the third most numerous pig breed in Italy, after the Large White Italiana and the Italian Landrace. It is one of the seven pig breeds of foreign origin recognised by the Ministero delle Politiche Agricole Alimentari e Forestali, the Italian ministry of agriculture and forestry, and one of the four for which a genealogical herdbook is kept by the Associazione Nazionale Allevatori Suini, the Italian national association of pig-breeders.

Balsamic vinegar of Modena is a variety of balsamic vinegar and a protected geographic indication (PGI) condiment from Italy. It is produced according to various recipes. The PGI production regulations leave plenty of leeway, allowing the use of grape must in percentages between 20 and 90% and wine vinegar between 10 and 80%. The use of caramel is allowed, up to 2%. Reading the tag can provide useful information on the ingredients used and the processing methods. Withdrawal and refilling, as used in making Traditional Balsamic Vinegar, are not used; the ingredients, once mixed, must be kept in wood containers for a duration of at least 60 days. If the product is kept there for 3 years or more it is labeled "invecchiato" (aged). The Balsamic vinegar of Modena gained the PGI label on 3 July 2009. The requirements for the much more expensive PDO Traditional Balsamic Vinegar are different and more restrictive; it must contain only grape must and be aged for at least 12 years.

Nocera is a dark black Italian grape variety producing deeply colored, high acidity wines. It originates from the north eastern region of Sicily and is now also grown in Calabria. It is an allowed component of five DOC wines as well as 15 IGT wines. It has good vigor but poor disease resistance.

Protected designation of origin Geographical indication of food origin

The protected designation of origin (PDO) is a type of geographical indication of the European Union aimed at preserving the designations of origin of food-related products. The designation was created in 1992 and its main purpose is to designate products that have been produced, processed and developed in a specific geographical area, using the recognized know-how of local producers and ingredients from the region concerned.
